Allan's Breakfast Club prepares salmon-avocado poppy seed bagel
Avocado grows throughout the year in Australia and is a must with any breakfast. Allan Bourbon has brought the classic bagel from Bondi Beach to Berlin - serving it up in Allan's Breakfast Club.
Breakfast can be had anywhere
It's his little spot in Berlin. He's found it here, despite the tough winters. And he's brought a bit of Australia's Bondi Beach to the German capital.: the café ABC, which stands for "Allan's Breakfast Club." Just as the name implies, it's all about Australian breakfast.
A man who knows what he can do
"I am not a trained chef, but I love food, I love cooking. So basically, everything I learned from different places where I worked in Sydney, I tried then out at home. I asked the head chefs to come to my place and we cooked together. Every chef that I worked with or every restaurant I worked at, they all trained me and gave me something that I learned from." - Allan Bourbon

Bourbon and vodka
Allan Boubon marinates the salmon for his salmon-avocado poppy seed bagel himself. For the marinade, he combines red beet, salt, sugar, dill and vodka. The red beet gives the fish its dark red edge. The salmon marinates for up to three days in the refrigerator. The marinade also preserves it, and lends it its unique flavor.
Bondi Beach in Berlin
"That recipe is from Sydney, from Bondi, were I used to live with my girlfriend. We'd go every morning for a swim. Afterward, just around the corner, there's a coffee place called "Harry's Bondi" and we always used to go there and sit in the sun, and order salmon bagel with avocado and poppy seed. It was amazing, it was perfect, the best thing I could do!" - Allan Bourbon
