Creamed green pea soup with a Hungarian sparkling wine

For 4-6 people

Ingredients:

½ kilo green peas
80-100 grams of onions
3 garlic cloves
1 tsp salt
1 tsp white pepper
200 mL beef broth
100 mL cream
100 ml sparkling wine
1 tsp oil

Add oil to a heated pot and cook the onions. Then add the peas, let cook for a minute and then add the beef broth. Then dice the garlic and add to the pot, followed by salt and pepper. Mix the contents with a mixer. Add cream and sparkling wine. Stir again.

Panfried goose liver topped off with a Hungarian sparkling wine.

For 4 people

Ingredients:

800 grams goose liver
3 chopped garlic cloves
200 ml sparkling wine
8 strips of think ham/bacon strips
potatoes for mashed potatoes
milk for mashed potatoes

Put the goose liver in an oiled frying pan and fry. After a few minutes of cooking the meat on both sides add the garlic. Then pour in the sparkling wine and let cook for a couple of minutes more until the pan no longer spits because the alcohol will have burned off. Cook bacon strips on another cooking surface and also prepare the mashed potatoes.

To serve, first lay down the mashed potatoes followed by the bacon, goose liver and garlic.

Bon appetit!
